  1. Just Made: Roasted Veggie Grain Salad

    I love a grain salad.

    Barley with tons of roasted vegetables. This makes me such a happy girl.

    This meal was born at the farmers market.

    Bright yellow zucchini.

    Plus yellow baby tomatoes and yellow corn. This was a very sunny meal, I guess.

    The yellow zucchini was green inside. I got way too excited about this.

    Green. Inside. Neat.

    We roasted the tomatoes and zucchini with onions, olive oil, salt and pepper. At the same time, we threw the ears of corn in the oven wrapped in aluminum foil with olive oil, salt, and pepper.

    While the veggies were roasting and the barley was simmering, Daniel sliced up some raw garlic. Yes, raw. Raw garlic is really good for you. Also we forgot to add it to the roasting pan. Whoops.

    I mixed the barley with spinach and olive oil.

    And added the veggies.

    All together now. Barley and veggie bowl with a side of roasted corn. Incredibly easy and tasty way to savor summer farmers market finds.

    I found something else at the farmers market, and I’m hoping my green-thumbed friends out there will be able to help me.

    I got this basil plant, which I was (clearly) very excited about. I bought it yesterday, and when I woke up this morning it was dead. I watered it, but it has yet to resurrect itself. What the heck did I do wrong? I’ve been known to be a plant killer, but I think this is a record. Any tips would be greatly appreciated.

    Oh, and one last picture: dessert.

    Which I ate before dinner. Like it should be.


  2. Just Made: Holiday Grain Salad

    I’m off to spend the holiday with my lovely family, watching the snow and, you know, eating. As I’ve almost had enough sweets and cookies this holiday, I thought I’d contribute a savory (and healthy) salad.

    Aren’t the colors festive? And it came together in less than twenty minutes. This would work with a variety of veggies or grains, but here’s what the boyfriend threw into ours:

    • 1 cup barley, cooked
    • 2 cups baby spinach
    • 4 cups chickpeas, cooked
    • 1/2 cup sun-dried tomatoes, roughly chopped
    • 1/2 cup kalamata olives, roughly chopped
    • 1/2 cup walnut pieces
    • 2 cloves garlic, minced
    • juice of 3 lemons
    • 1/4 cup olive oil
    • 2 tsp olive juice
    • tsp salt

  3. Triple Berry Grain Salad

    May I just say that I love summer? Put this salad on my list of reasons why.

    Not only is it delicious, but it’s also full of good-for-you foods, such as barley (which helps to regulate your blood sugar), blueberries and straweberries (hey there, antioxidants), and spinach (love that iron and calcium). This might be a new summer staple for me, and I highly recommend it.

    Triple Berry Grain Salad

    2/3 (when dry) cup barley

    1/2 cup (when dry) wheatberries

    1 1/2 cups blueberries

    2 cups strawberries, diced

    3 cups spinach

    1/3 cup pine nuts

    1/2 cup parsley, minced

    2 spring onions, finely chopped

    juice of 3 limes

    1/4 cup red wine vinegar (I used blueberry and pomegranate infused)

    1/4 cup canola oil (or other mildly flavored oil)

    pinch of salt

    Cook the grains separately on the stovetop; shock with cold water when done cooking. Combine last four ingredients to make the vinaigrette, and then combine everything in a large salad bowl.

    That’s it! It’s really that simple! This salad delivers big returns for a minimal investment of your time, and I promise that it’s a crowd pleaser. Make it for your next potluck picnic, and let me know how it goes over!
