  1. When last we met our protagonist…

    October 18, 2011 by justgathering

… she was beginning to slowly make her way through a peck and a half of apples.
And she now offers to you:
    Places this month has gone.

I’ve spent it mostly baking and cooking with apples.

Pancakes topped with maple syrup and apples sauteed in butter, brown sugar and cinnamon.

Pie crust, made with 3 parts flour and 1 part crushed walnuts.

    Flipping said pie crust.

It’s only blurry because of my ninja speed skills.

Yes, I greased the pie plate with walnut oil.

Making a pie crust does not have to be that hard. Delicious taste does not require a fancy lattice. It doesn’t even require butter, in my opinion, although this particular pie had plenty.

Apples, skins on, simmered in maple syrup, cinnamon, and lots of bourbon.

    Fill the crust.

Not the most beautiful pie in the world, but a darn tasty one.

And while it was baking, Daniel and I made a little dinner.

Because it’s just so easy and autumnal, acorn squash, halved and filled with beans, onions, and cheese. His and hers.

Guess which is which? Hint: I don’t require an entire block of cheese with my dinner.

Other things I’ve done this month?

I ran the Staten Island Half Marathon for the second year in a row.

1:52:59. Beat my PR, set at this very same race last year, by about 7 minutes. Happy runner.

And last weekend, Daniel and I escaped with a few friends for an end-of-season trip to Fire Island. Nothing but cooking, eating, playing games, walking on the beach, and relaxing.

And I might have snuck in an island run as well.

It’s been a wild and crazy fall, and the coming weeks promise no respite. But there’s sure to be plenty more good food, great running, and opportunities to get creative. So all I can say is: I’m down.

  2. More Weekend Eats and a Trip to BIG!

    July 11, 2011 by justgathering

I found out about Build it Green! NYC through an Apartment Therapy email last week, and Daniel and I put it on our list of places to go immediately.

Build it Green! is a nonprofit that sells salvaged, surplus, and donated building materials. It’s all about reusing the tons of stuff that is already circulating this city and getting that stuff into the hands of people who want to make something new out of it. Proceeds go to environmental education in the city. Pretty darn cool.

The whole place is full of doors, fireplaces, windows, appliances, flooring, toilets, hardware, and anything else you can think of that might be saved from a building deconstruction. Everything is priced ridiculously low, so all you have to do is trek out to Queens and then have some way of getting whatever you find home.

Daniel and I made the trip with our friend Jayme. We were looking for salvaged wood to build a shelf for our (yet to be planted) herb garden, but we didn’t find exactly the piece we’re looking for. I did, however, fall in love with this:

Check that out. An old school projector screen, in perfect condition, for 2o bucks. Now all we need is a projector and we’ve got our very own movies in the park. I love it.

Since we were in Astoria, we decided to follow up Build it Green! with some Greek food. We hit up a place called Athens Cafe. The food was delicious, mostly because we were really, really hungry.

The three of us split dips and pita, which included hummus, roasted red pepper dip, tzatziki, and an unidentifiable fourth dip that none of us liked. We asked the waitress at the end of the meal and were informed that it was mashed potatoes with fish eggs. To me, it was just really, really salty.

We also split a roasted vegetable and goat cheese sandwich with very herby and salty fries. Also good, also probably because were overly hungry. (This is in retrospect; at the time, this was pretty much the best meal I’d ever had.)

    More weekend eats? Okay.

Saturday night, we made pizza with another couple.

Mozzarella with tomatoes, mushrooms, and half caramelized onions and roasted garlic.

Parsley pesto with mozzarella, olives, sun-dried tomatoes, and roasted red pepper.

On Sunday morning, we woke up late and made French toast.

Good weekend in food. Oh, and I had gelato twice. And I’m on my way to get some more now. That’s what happens when you live dangerously close to Screme and have friends in the hood who are as obsessed with it as you are…

  3. Just Ran: 5 Neighborly Miles

    June 5, 2011 by justgathering

Since moving in February, I’ve noticed that there are a few other lady runners in my building. I’ve slowly been getting to know the neighbors, and finally our passing conversations have begun to develop into picnics in the park and, now, morning runs.

Today I met up with two of my new runner friends to take on Central Park. One of the women has an adorable son, and he came along in the jogging stroller.

I had never been up close and personal with a jogging stroller before, and I loved it for two main reasons:

    1. Our small friend kept us entertained the whole time, asking questions and pointing out things like lawn mowers and cops on motorcycles. Definitely keeps your mind off which mile you’re on or how many hills are left.

    2. Running with a stroller is a serious workout. I only took over for a little while, and I was dying. I have major respect for all you running mamas out there.

We did a loop of the park and ended up doing 4.9 miles in 46:40, a 9:31 average pace. Good run + new running friends + extra workout from pushing 3-year-old = happily tired girl.

After that, I had a craving for pancakes.

And now I’m knee-deep in a day of cooking, cleaning, laundry, and catching up on my podcasts. We’re having a friend over for dinner tonight and were struck with culinary inspiration. All I’ll say now is that the entree involves these beauties:

More pictures and a recipe to come… Til then, enjoy your Sunday, friends.

  4. Vitamixing

    May 19, 2011 by justgathering

I’m at the airport trying to make the most of the expensive wifi by getting lots of work done, but I wanted to post this morning’s green smoothie — made it the amazing Vitamix.

His and hers. The Vitamix blends veggies into the consistency of a milkshake, no ice and not much liquid required. It is my new love.

Speaking of love, Daniel and I went on a double date last night with a couple we love, Sofia and BT. Sofia was a better blogger than me and took pictures of everything we ate. Check out her post about the evening.

I’m off to Illinois for my little sister’s and high school best friend’s bridal showers, but I’ve got plenty of pictures of this week’s awesome eats to post when I land and get settled. Til then, friends.

  5. Just Ate: Oats in a Jar

    May 5, 2011 by justgathering

I was running late this morning, so I sacrificed my morning green smoothie for an old favorite: oats in a jar.

1/2 cup of oats, 1/4 cup of walnuts, 1/2 Tablespoon chia, and a whole lot of cinnamon. I added water when I got to work, microwaved, and ate. Happily.

    What’s your favorite on-the-go breakfast?

  6. Birthday Drinks

    April 8, 2011 by justgathering

On Sunday, Daniel turned 26. I know, he’s old. I tell him that every day.

He’s one of those people who really doesn’t need anything, and if he wanted something he would buy it himself, so I was totally at a loss over what to give him for his birthday. In the end, I decided to go with experiences over possessions, and I’m so glad I did, because we had a fantastic day together.

We woke up in the morning and took the dogs to Central Park so we could watch our friend Jayme run the More/Fitness Magazine Half Marathon. Of course, we had to support with some signage.

Before we even spotted Jayme, we heard her. “Nice,” she said as she laughed and sped by.

Congrats to Jayme on her 1:50:00 finish! Now that’s nice.

We returned to the apartment and made our now-favorite weekend brunch of gluten-free blueberry pancakes. With almond butter and maple syrup, of course.

The first stop planned for Daniel’s surprise day was the NYC Vegetarian Food Festival. We got there, though, and the line was blocks long. We didn’t have time to wait before the real event of the day, so we grabbed some free KIND bars from the KIND truck and decided to walk from 18th Street down to Tribeca.

We got some coffees from Irving Farm on the way.

Thankfully, the sun came out and the day was gorgeous. Our walk was more of a ramble and lasted almost 2 hours. We stopped into a few shops, including a bike shop so we could dream about this summer’s wonderful bike rides.

We finally made it to our destination: New York Vintners for a Wine 101 Class. We were greeted and immediately given glasses of prosecco, a very good start.

The class was awesome. The guy who led it, Jesse, was really chill and the whole thing was as unpretentious as a wine class can possibly get. It was pretty much perfect for us, since we knew very little about wine going in. I still know very little about the wines discussed after the first twenty minutes or so, because I got a little tipsy thanks to all the tastings. Oops.

I definitely had to take advantage of the snacks provided, and that KIND bar came in pretty handy on the way home, too.

The class was really enjoyable, and I actually feel like I can talk about wine now and not feel like a total idiot. Daniel’s just glad I have some new wine vocabulary. He found it odd that I used to describe red wines as either “meaty” or “not meaty.” (Does anyone else know what I’m talking about here?)

Anyway, we took home a bottle of wine to have with our birthday dinner, and it was deliciously fruity. And decidedly not meaty.

Another very happy birthday to my darling. Here’s to many more celebrations together.

  7. Vermont Weekend & Back to the City

    March 29, 2011 by justgathering

I love traveling, for the adventures I have visiting other places and for the happiness I always feel to come home. Over the weekend, Daniel and I visited our friends in Vermont. We ate lots of good food, including homemade waffles with hot maple syrup with our lovely hosts the first morning (thanks, Ashley and Will!) and ridiculously good (and huge) breakfasts at the Dorset Inn the second morning.

Oatmeal (with wheatberries!) and fruit and 2 large slices of the chewiest bread ever. Yes, I will have a side of carbs with my carbs, and some carbs for dessert. Delicious.

Of course, I smothered that oatmeal in maple syrup. Because we were in Vermont.

Other great Vermont eats? This carrot ginger leek soup from the Northshire Bookstore in Manchester, VT. Yep, leeks. Unexpected and quite yummy — they added a nice sweetness to this classic soup.

Also with great local whole wheat sourdough. So good.

Outside the Bookstore, we paused over this thought:

    Agreed.

We came home Sunday afternoon, and I’ve jumped back into my running routine. 3 miles yesterday in 27:02, and another 3 today in 26:17. Today’s run was fantastic because I made it outside after work while the sun was still shining.

I’m pretty proud of that 8:47 pace, especially since Central Park is so hilly. I felt fast and strong. And check out this gorgeous view!

How could I not run? Loved getting away for the weekend, and loved coming back to this.

I’ve got plans to make a few trips home to Chicago over the next few months. Anyone else traveling this spring? Where are you going? What are you most looking forward to?

And what’s the best thing about coming home?

  8. Back to the Greens…

    March 15, 2011 by justgathering

As much as I loved having my first cup of coffee and bowl of oats in almost a month yesterday morning, I was back on the greens this morning.

They are seriously addictive. But it’s not just that.

I’ve come to love making a smoothie in the morning and drinking half while I get ready for work and the other half when I get to work. I put chia seeds only in the second half, so they have time to expand. It’s become my new routine, and it makes me happy. So I’ll stick to it, at least until the next new routine develops.

Anyone else out there with routines, morning or otherwise, that simply add a little happiness to your day?

  9. Crazy Sexy Cleanse Day 21: Green Smoothie & Running Central Park

    March 13, 2011 by justgathering

I started the last official day of my cleanse with a very green smoothie.

Banana, avocado, almond milk, romaine, spinach, dates and Amazing Meal. Hit the spot.

I was debating over running this morning. My knee is still giving me trouble, but Friday’s run went really well. And I’m itching. You runners out there know the feeling. I finally decided that the weather was just too good to pass up, and I hit Central Park for a quick 3 miles.

I wore one of the Bondi Bands I picked up at the marathon expo. I am obsessed with this thing. Never has a headband stayed put in my thin hair so well. Love.

I listened to Jillain Michaels’s podcast — she’s back! After a way-too-long hiatus, her radio show has returned, and my life is complete again. I heart her.

My knee was hurting by mile 2.5, but I pushed it to 3 and walked home, happy to get outside and content to be running at all.

I’m meeting a dear friend to go shopping in Soho this afternoon — can’t pass up the chance to be out and about on this lovely day!

  10. Crazy Sexy Cleanse Day 13: Gluten-Free Blueberry Pancakes

    March 5, 2011 by justgathering

The rest of my all liquids day went splendidly. My green smoothies kept me full, and my juices kept me energized. I spent the evening at the movies and brought along my final smoothie of the day, a dessert smoothie — banana, almond milk, cashews, chocolate Amazing Meal, and chia seeds. So yummy.

This morning, I stuck with liquids til noon, as has been my custom on the cleanse thus far.

We were nearly out of veggies when I woke up this morning, so this smoothie featured lots of romaine lettuce and some frozen mixed berries, plus Amazing Meal and a little almond butter. It was okay, but I was really excited to get some actual food into me.

In honor of National Pancake Day, which was earlier this week, and Pancake Tuesday, which is coming up this week, Daniel and I have been planning a pancake brunch all week. Gluten-free, of course.

We used Bob’s Red Mill Gluten-Free Pancake Flour. The recipe was simple:

    • 1 cup GF flour
    • 1 cup almond milk
    • 2 tsp vanilla extract
    • 2 tsp baking powder
    • 1 T cinnamon
    • a handful of frozen blueberries sprinkled into each pancake while it’s cooking

This made two pretty big pancakes for each of us. Daniel went with maple syrup on his, and I stuck with almond butter on mine.

    Perfect Saturday brunch.
