Happy Paddy’s Day, friends. My boss surprised me with a holiday gift this morning: green juice. (Love my job.)
Always prepared, of course, I packed my own greens as well. Spinach and kale with quinoa, red pepper, tofu and pumpkin seeds. A splash of Goddess dressing, a squirt of dijon, a drizzle of olive oil and bit of apple cider vinegar made this salad complete.
Have I ever mentioned that I, without fail, spill salad dressing in my purse at least a few times a month? The other day I went to yoga class in clothes that had been marinating in apple cider vinegar in my bag. I reeked. But I digress.
After yoga yesterday [read about latest 30 in 30 studio, YogaWorks], I had a little sweet treat: vegan ice cream from Lula’s Sweet Apothecary in the East Village.
I had mint chip, and it was the perfect afternoon snack, considering it was one of our most springlike days yet this year. I like that most of Lula’s ice creams are cashew- or coconut-based; it mean that it was not only tasty, but left my tummy feeling pretty happy as well. This place might be a new favorite…
My ice cream was also great fuel for a post-work 3 mile run, as well as the swing dancing class that Daniel and I attended last night. We got a deal through Living Social, and the class was fun and comfort zone-extending, which I think is a very good thing. We’ll be going back for a few more classes, and maybe by the end we’ll look coordinated enough to take some pictures for the blog.
