  1. Thankful Thursday

    I’ve got a lot to be thankful for on this gorgeous Thursday, but I’ll narrow it down to just a couple things that are putting a smile on my face this morning.

    Today’s run in Central Park.

    The weather was beautiful, I had a good podcast to listen to, and I felt pretty strong. 3 miles in 27:08.

    Remember hopscotch?

    The farmers markets are filling up again.

    Yes to strawberries. Yes to amazing spring and summer greens. Yes to the giant jar of fresh pickles I’m making my way through.

    Smoothies in bowls.

    A favorite summer treat. Who else is into foods you eat with a spoon? Can’t get enough.

    Unexpected gifts.

    I got a package in the mail earlier this week from my dad. He sent me a grow light so I can start an herb garden in our sunless apartment, which I was expecting, but he also sent this amazing lamp. He knew I would absolutely love it, and this sweet gift has made my week.

    Cooking and sharing meals with friends

    Our most recent? This beetza. (I don’t know who came up with this nickname for beet pizza, but I refuse to stop using it. My boss responded with: “I really prefer cheetza.”)

    Whole wheat crust made in the Vitamix, topped with roasted beets, goat cheese, spinach and a balsamic reduction.

    So many reasons to be appreciative today. What’s yours?


  2. Crazy Sexy Cleanse Day 13: Gluten-Free Blueberry Pancakes

    The rest of my all liquids day went splendidly. My green smoothies kept me full, and my juices kept me energized. I spent the evening at the movies and brought along my final smoothie of the day, a dessert smoothie — banana, almond milk, cashews, chocolate Amazing Meal, and chia seeds. So yummy.

    This morning, I stuck with liquids til noon, as has been my custom on the cleanse thus far.

    We were nearly out of veggies when I woke up this morning, so this smoothie featured lots of romaine lettuce and some frozen mixed berries, plus Amazing Meal and a little almond butter. It was okay, but I was really excited to get some actual food into me.

    In honor of National Pancake Day, which was earlier this week, and Pancake Tuesday, which is coming up this week, Daniel and I have been planning a pancake brunch all week. Gluten-free, of course.

    We used Bob’s Red Mill Gluten-Free Pancake Flour. The recipe was simple:

    • 1 cup GF flour
    • 1 cup almond milk
    • 2 tsp vanilla extract
    • 2 tsp baking powder
    • 1 T cinnamon
    • a handful of frozen blueberries sprinkled into each pancake while it’s cooking

    This made two pretty big pancakes for each of us. Daniel went with maple syrup on his, and I stuck with almond butter on mine.

    Perfect Saturday brunch.


  3. Just Ran: Speed Intervals

    Lately my runs have been feeling just so-so. A little blah, a little boring, a little slower than usual. But this morning’s workout pulled me out of that slump, because today was interval day.

    Interval runs are my absolute favorite type of workout. They add a little spice to the running routine, and they also make you feel fast and powerful. The feeling at the end of an interval run is similar to the feeling at the end of a very long run for me: one of accomplishment and pride. Scroll down for my prescription for an awesome interval workout.

    I followed up my run with a fantastic recovery smoothie.

    (Almond milk, frozen blueberries, Chocolate Amazing Meal, and ice, topped with sliced almonds and almond butter. Lots of almond. Yum.)
