Otherwise known as the I Now Have a Stove but am Seriously Lacking Groceries Breakfast of Champions.
Sometimes these mornings bring about the happiest of accidents, though. Into the cast iron skillet went:
1/4 block of extra firm tofu, crumbled
3 cherry tomatoes, chopped
1/4 red bell pepper, chopped
1 tsp dried dill
1/2 tsp dried garlic
1 T nutritional yeast
2 tsp tahini
1/8 cup cashew pieces
pinch of salt
It’s been awhile since I’ve strayed away from oats for breakfast, but this was a refreshing change. Plenty of protein.
Last night, I attempted to go to Yoga at the Great Lawn, but it got rained out. This means I have no awesome pictures of 10,000 people doing downward dog to share with you, but I do have some other cool fitness-related things coming up. Saturday, I’m heading to Central Park to do a boot camp led by Fit Chick in the City, about which I am super pumped. I’m also scheming about my next race (and training plan)… What will it be? Go for another long distance feat, or strive toward a 5K PR? Thoughts?
